Eco-friendly cooking stove that saves up to 30% gas fuel

Commercial cooking stoves have been using the same blue flame technology for quite a long time. With a low thermal efficiency of 30%, it takes a lot of time to heat and leads to higher ambient temperature in the kitchen. Even the food prepared loses its moisture and nutrients due to the way it burns. Also, the high carbon emissions make maintenance a nightmare. More than 20% of costs are spent on cleaning and sanitizing kitchen equipment in commercial kitchens.
Those were the problems that the client came to the team at Analogy design with. Most of these can be solved by a better combustion process. For that, the burner technology was completely reinvented. Mimicking the way charcoal burns, uniform radiant heat technology was used to get thermal efficiency of 78%. Compared to 30% efficiency of existing burners, this was a huge leap forward.
Because of the efficient combustion, the stove leaves no carbon emissions. This makes cleaning the utensils much easier.
Design journey
The team at Analogy conducted extensive ethnographic research to understand the various types of recipes used in commercial kitchens. They’ve also researched chef’s methods and styles of cooking to design the parts of the stove.
For instance, due to a chef’s swift movements, a solid vessel rest was designed to protect the delicate ceramic surface of the burner.
Modular design
Through the research conducted, several types of utensils that can be adapted into a modular system were also selected. The main cooking stove was designed as the base over which several attachments/ mods could be swapped around.
It led to an efficient use of kitchen space. Additionally, this also reduced the number of SKUs required and led to a huge reduction in manufacturing costs.
Within a very short span of time, the product was adopted in several large hospitality chains. Even the kitchens of the Prime Minister of India and President of India are powered by Agnisumukh products.
Historically, stove manufacturers never understood how chefs cook. And chefs never understood how its designed. When it all came together now, you create a much better-designed stove that chefs love.
