Why is a Scrubber essential for modern restaurant kitchens, especially those using open-fire cooking appliances like grills and ovens?
Technically, you could manage without a Scrubber. Dishes can be prepared in a convection oven or even on a traditional stove, popular in the last century. But in that case, your restaurant’s menu might become dull and unappealing to your guests.
Today, cooking over an open flame has become not only a leading trend but almost a requirement in restaurants. Over the past decade, the following have gained massive popularity:

Cuisines worldwide are returning to their roots and traditional cooking methods. This makes sense — for centuries, even millennia, food was cooked over fire. The aroma of flame-cooked dishes stirs our most primal instincts and memories, making us flock to restaurants for grill or Josper menus.
However, installing fire-based cooking equipment indoors without proper precautions is dangerous. Placing a standard ventilation hood above open flames poses a severe fire risk.
The only safe and proper solution for connecting grills, Josper ovens, or similar equipment in a restaurant kitchen is through a Scrubber system.
Why Is a Scrubber for Indoor Grills Essential?
Operating a grill or Josper without ventilation is not an option. Clouds of smoke and soot covering the ceiling will quickly prove this decision wrong.
But even with a ventilation hood connected to the system above your charcoal or wood-fired equipment, the real danger may only become apparent after several months.
What happens during this time?
Soot, smoke, and grease gradually accumulate inside the ventilation system, layer after layer. Once the buildup becomes thick enough, one stray spark is all it takes to ignite the grease, setting the ventilation pipes, and then the entire kitchen, ablaze.
Cleaning out the accumulated soot from the ventilation pipes daily is nearly impossible. Meanwhile, every time you fire up the grill, Josper, or oven, sparks are inevitably drawn into the ventilation system.
This is why the tragic outcome of a restaurant fire is often unavoidable in setups without a Scrubber. In fact, when you hear about a restaurant fire, 99% of the time, it’s due to a grill or Josper operating without a Scrubber.
How Does a Scrubber Work?
A Scrubber cleans smoke by filtering out soot and grease. These particles settle inside the Scrubber on specially designed filtration devices. As a result, only smoke and hot air — free of grease, soot, and at a lower temperature — enter the ventilation system.
This keeps your ventilation pipes clean.
Our Scrubbers also feature an automatic cleaning mode. About once a week, you simply activate this mode with a cleaning agent added.
In addition to the ceramic filtration device, the Scrubber system constantly circulates water, ensuring safe operation even if the Scrubber hasn’t been cleaned promptly. If soot and grease have built up, sparks from the fire won’t ignite anything, thanks to the fine water mist inside the filter.
However, for the Scrubber to last and function properly, it’s crucial to activate the cleaning mode regularly. This prevents blockages and the need for unscheduled maintenance.
Scrubber Price: What Factors Influence It?
The price of a Scrubber depends on several construction features.
Materials
We manufacture Scrubber bodies exclusively from stainless steel, significantly extending the equipment’s lifespan. We don’t recommend Scrubbers made from painted steel because under the harsh effects of chemicals and high temperatures, the protective coating quickly deteriorates.
All structural components, such as pipes, nozzles, and elements exposed to flames, steam, water, and cleaning agents, are made from stainless steel and brass. In Ukraine, we are the only manufacturer using such high-quality materials for Scrubbers designed for grills and Josper ovens.
Automation
Our GFA Scrubber model costs more than the GFL model due to the automation of all processes. The GFA model offers automatic operation with button-controlled settings, while the GFL model requires manual input from your staff. Additionally, the automated GFA model is more water-efficient, which is crucial for restaurants using municipal water supplies.
Customization
If your restaurant has a non-standard ventilation system, limited space, or other unique requirements, these factors may also increase the Scrubber’s production cost, thus affecting the final price.
Parts
